Korean black bean paste (Chunjang, 춘장) is made from salty fermented soybeans and colored with caramel. It is an essential spice in the preparation of Korean Black Bean Sauce Noodles (Jajangmyeon, 자장면).
It is a bit bitter and salty by itself, so sugar is added to Korean black bean sauce (Jajang, fried Korean black bean paste with meat and vegetables). Although a Chinese trader may have brought Korean black bean paste to Korea, it differs from Chinese black bean paste as it evolved to meet Korean taste buds.
